A pint-sized spot in the über-trendy Palermo Soho barrio of Buenos Aires, Tres Monos (three monkeys) has been the talk of the town thanks to its punk attitude and neon fetish fused with warm porteño hospitality since its 2019 opening. With just 10 barside seats but plenty of curbside space, bartenders and co-owners Sebastián Atienza (ex-Florería Atlántico) and Charly Aguinsky please punters with well-priced classics, a generous selection of hard-to-find-in-Argentina spirits and plenty of seasonal innovation. Sustainability goes hand in hand with creativity, the team sourcing ingredients from Argentina’s generous pantry to create brand new spirits such as their Licor del Norte that’s infused with rica rica, muña and suico (marigold). Cocktails also brim with Argentinian identity: take Grosera, which includes Patagonian white currants, pear cider, white vermouth and vodka. Undeterred by the pandemic, the monkeys launched an RTD cocktail line, while there’s also an educational element: upstairs from the bar, the duo run an eponymous drinks academy with co-owners Gustavo Vocke and Esteban Varela.
